Yeasted Waffles

Yeasted Waffles

Yield: 6-8 standard waffles

These are really the best waffles ever.  The batter must ferment overnight but the 10 minutes you spend the night before is so worth it!

Ingredients:

2        cups all-purpose flour
1        teaspoon instant yeast
1        Tablespoon sugar
1/2     teaspoon salt
2        cups milk
6        Tablespoons unsalted butter, melted
1        large egg
Oil, butter, or non-stick cooking spray for waffle iron

Instructions:

The night before:

1.  Combine the flour, yeast, sugar, and salt in a medium-sized bowl.  Add milk and whisk until blended.

2.  Cover the bowl tightly and let it stand overnight at room temperature (if the room is over 70 degrees F, put it in the refrigerator).

In the morning:

1.  Preheat the waffle iron to the highest setting. 

2.  Melt the butter.  Beat the egg in a separate bowl and then beat it into the batter along with the butter.  The batter will seem a little thinner than your standard waffle batter.

3.  Lightly oil or butter the hot waffle iron on the top and bottom (this can be easily accomplished using a paper towel, a silicone pastry brush, or a small piece of bread.)

4.  Add about 2/3 cup of batter for each waffle, enough to cover the surface of the waffle iron.

5.  Cook for 2-3 minutes, depending on how hot your waffle iron is.  Cook them until they are nice and golden brown, but don't over cook.

Notes: 
  • We like to eat them with pure maple syrup, or stewed apples and toasted walnuts.  Nutella and bananas is a nice combination as is strawberries and whipped cream.
  • You need to eat them while hot which means the cook usually doesn't get to eat with everyone else.  You can also cook the entire batch at once and keep them warm in the oven (set at 200 degrees F).  Be sure to put them directly on a clean oven rack or a cooling rack so that they stay crisp.

Vanilla Granola

Vanilla Granola

This is yummy as a breakfast cereal, or sprinkled over yogurt. 

Yield: About 8 cups

Ingredients:
4        cups old fashioned rolled oats
1        cup roughly chopped raw almonds
1        cup roughly chopped raw pecans
1/4     teaspoon salt
1        teaspoon ground cinnamon
1/3     cup vegetable oil (or half butter/half oil)
1/4     cup golden brown sugar, packed
1/4     cup honey
4        teaspoons vanilla extract

Instructions:
1. Position rack to middle of oven and preheat to 300 F degrees.
2. Lightly oil a large baking sheet (it should be a lipped one).
3. Mix first 5 ingredients in large bowl.
4. Combine oil, honey, and sugar in small saucepan; bring to simmer over medium heat.
5. Remove from heat; stir in vanilla.
6. Pour hot liquid over oat mixture; stir well.
7. Toss mixture until thoroughly mixed.
8. Spread granola evenly on prepared baking sheet.
9. Bake until golden brown, stirring occasionally, about 30 minutes (but check after 20).
10. Transfer sheet to rack; cool granola completely.

Store in an airtight container at room temperature.

You really can add any type of nuts; unsweetened, shredded coconut would also be good.  I like to add one cup of flax seeds to the oat mixture before mixing with the wet stuff.  If you want to add dried fruit, add once the granola is cool.
